Vancouver restaurant to welcome chef from award-winning Bangkok eatery for collaborative dinner 17 years in the making

If you’re looking for something delicious to do next month, look no further. The 10th annual Vancouver World Chef Exchange is returning with a lineup of Michelin Guide-recognized teams from across the globe joining forces with much-loved Vancouver restaurants.

Among those participating, Boulevard Kitchen and Oyster Bar is welcoming Wilfrid Hocquet, executive chef and co-founder of Margo, an acclaimed modern bistro in Bangkok that’s already earning international attention after recently opening.

Hocquet, who is originally from Montpellier, France, has trained in some of the world’s most renowned kitchens, including Le Jardin des Sens (three Michelin stars) and Louise XV — Alain Ducasse (three stars) in Monaco, before moving on to lead Michelin-starred restaurants in France, Monaco, Paris and Thailand.

In 2025, he co-founded Margo, a modern bistro in Bangkok that has already received international recognition, having been named the Best Opening of the Year by Michelin Thailand.

For the World Chef Exchange, Hocquet will be joining forces with Boulevard’s Executive Chef Roger Ma to create a six-course menu showcasing the shared foundation in modern French cuisine while drawing on Wilfrid’s international culinary chapters and Roger’s evolution in shaping Boulevard into one of Canada’s top dining destinations.

Expect a tasting menu featuring elegant seafood preparations, signature dishes including Hocquet’s black truffle pithivier, and a dessert by Hocquet and Executive Pastry Chef Kenta Takahashi.

This one-night-only event won’t actually be the first time that Hocquet and Ma will be working together, as the duo worked together in 2009 at Restaurant Daniel in New York City (another Michelin-starred kitchen).

Reservations for this event are available online, with seatings at 6 and 8:30 p.m. Tables are expected to book up quickly, so be sure to make a reservation sooner rather than later.

Other restaurants participating include ELEM (hosting Chef Lucas Trahan from two Michelin Star Ever in Chicago), Botanist (hosting Chef James Knappet from two Michelin Star Kitchen Table in London), and Five Sails (hosting Chef Taejun Eom from one Michelin star Solbam in Seoul).
